- 2 boneless, skinless chicken breasts

- 1 tsp Himalayan pink salt

- 2 tbsp olive oil
For the Roasted Garlic Aioli:
- ½ cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 head of garlic
- 1 tbsp olive oil
- ¼ tsp Himalayan pink salt

Prepare the Roasted Garlic:
- Preheat oven to 400°F (200°C).
- Slice the top off a garlic head, drizzle with olive oil, and wrap it in foil.
- Roast for 30-40 minutes until soft and golden. Let cool.

Prepare the Chicken:
- In a bowl, mix everything bagel seasoning, Himalayan pink salt, black pepper, garlic powder, smoked paprika, and panko breadcrumbs.
- Dip each chicken breast in the beaten egg, then coat with the seasoning mixture.
- Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes per side until golden.
- Transfer to a 375°F (190°C) oven and bake for 15-20 minutes until the chicken is cooked through (internal temp: 165°F or 74°C).

Make the Aioli:
- Squeeze the roasted garlic into a bowl and mash it into a paste.
- Mix with mayo, lemon juice, Dijon mustard, and Himalayan pink salt.

- Slice the crispy chicken and serve with a drizzle of roasted garlic aioli or as a dipping sauce on the side.
