Everything Bagel Crusted Chicken with Roasted Garlic Aioli


Ingredients:

For the Roasted Garlic Aioli:

  • ½ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 head of garlic
  • 1 tbsp olive oil
  • ¼ tsp Himalayan pink salt

Instructions:

  1. Prepare the Roasted Garlic:

    • Preheat oven to 400°F (200°C).
    • Slice the top off a garlic head, drizzle with olive oil, and wrap it in foil.
    • Roast for 30-40 minutes until soft and golden. Let cool.
  2. Prepare the Chicken:

    • In a bowl, mix everything bagel seasoning, Himalayan pink salt, black pepper, garlic powder, smoked paprika, and panko breadcrumbs.
    • Dip each chicken breast in the beaten egg, then coat with the seasoning mixture.
    • Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes per side until golden.
    • Transfer to a 375°F (190°C) oven and bake for 15-20 minutes until the chicken is cooked through (internal temp: 165°F or 74°C).
  3. Make the Aioli:

    • Squeeze the roasted garlic into a bowl and mash it into a paste.
    • Mix with mayo, lemon juice, Dijon mustard, and Himalayan pink salt.
  4. Serve:

    • Slice the crispy chicken and serve with a drizzle of roasted garlic aioli or as a dipping sauce on the side.
    • Pair with roasted veggies or a fresh salad.
